
Move over corned beef, charred broccoli is the new kid on the block! This vegan broccoli Reuben is crazy delish. Made with Russian dressing, turmeric sauerkraut and grilled cheese – all vegan! We even have a recipe for gluten-free sandwich bread if you prefer your sandwiches sans gluten!


ingredients
1 small head broccoli, cut into florets
glug of olive oil
4 slice gluten-free sandwich bread or bread of your choice
4 slices of vegan cheese (80g approx.)
2 Tbsp. Russian dressing
a generous scoop of turmeric sauerkraut
salt and pepper to taste
pickles to serve

Preheat the oven to 200C. Toss the broccoli with oil, salt and pepper and roast for 10-15mins or until slightly charred.
Turn the oven to grill. Lightly toast the bread, spread Russian dressing on one side of each piece and top with cheese. Place the bread under the grill and grill until the cheese is melted and bubbly. Divide the broccoli between the sandwiches, top with sauerkraut and serve with pickles.
