4 slice gluten-free sandwich bread or your bread of choice
4 slices vegan cheese (80g approx.)
2 generous dessert spoons of kimchi
2 Tbsp. Gochujang mayo
1 spring onion, thinly sliced
salt and pepper to taste
Preheat the grill to 200C.
Lightly toast the bread, spread Gochujang mayo on one side of each piece and top with cheese. Place the bread under the grill and grill until the cheese is melted and bubbly.
Divide the kimchi between the sandwiches, top with spring onion and season to taste. Enjoy!
